Ranch Dressing (~1/4 cup): 1-2 T approved mayo
1 tsp dijon mustard
Dill
Garlic powder
Black pepper
Salt
Splenda (VERY small amount)
Water
Mix mayo and mustard, add dash
of each spice to taste, add water to
thin until desired consistency.
Cauliflower “Mashed Potatoes”:
1 bag frozen cauliflower florets
2 cloves garlic
¼ white or yellow onion
Chicken stock
Parsley
Onion/garlic powder
Salt/pepper
Roast cauliflower on cookie sheet
at 450 for 10-15min, or until
browning. Transfer to blender,
add ¼ cup chicken broth,
seasonings, and blend until
smooth.
Jicama Matchstick Fries: 1 jicama, cut into matchsticks
Canola oil
Salt
Onion and garlic powder
Paprika
Carefully place jicama fries into
hot oil and fry and until very
crispy. Cook in batches as
necessary. Remove and drain on
paper towels. Sprinkle liberally
with spices and serve with
approved ketchup.
